GEOFF JANSZ’S FAVOURITE BARBECUE RECIPE

Give the classic barbecue menu an original twist with this fantastic seafood recipe from popular TV chef Geoff Jansz.

Serves 4

1 kg green prawns
1 teaspoon palm sugar
2 tablespoons peanut oil
¼ cup lime juice
2 red chillies, seeded and finely chopped
1 tablespoon sweet chilli sauce
2 tablespoons chopped fresh coriander

  1. Shell and de-vein the prawns leaving the tails intact, then combine them with the remaining ingredients in a bowl and refrigerate for 1 hour.
  2. Preheat the barbecue grill or flat plate until it’s hot.
  3. Cook the prawns on the lightly greased barbecue for about 3 minutes on each side or until they’re just cooked through.
  4. Serve with steamed jasmine rice for a meal or as finger food.
